This time it’s the turn of chef Costas Spiliadis…

We’re calling it, The Royal Atlantis is set to become Dubai’s ultimate foodie destination. We’ve already seen the announcement of three top celebrity chef openings at the new hotel, and now another has just been added. Estiatorio Milos by acclaimed chef Costas Spiliadis is opening in Dubai later this year.

The restaurant will boast both indoor and outdoor dining as well as three private dining rooms, and promises uninterrupted views of The Royal Atlantis’ water fountains and Dubai’s glittering skyline.

The sophisticated Greek and Mediterranean fusion restaurant advertises that it will transport guests to ‘an urbane dining room in Athens’ complete with high ceilings, Greek marble floors and and a bustling show kitchen. Sounds dreamy.

Standing at the very heart of The Royal Atlantis Resort and Residences, estiatorio Milos’ design includes a structure which appears to ‘float’, and is fully transparent, so we can’t wait to see that take shape.

“The Middle East, specifically Dubai, has been on our radar for some time. Dubai has become a premier culinary and hospitality destination; with the world’s most talented chefs and well-regarded brands represented,” said Costas Spiliadis of the opening. ” The Royal Atlantis is an ideal partner in our efforts to expose the world to Greek cuisine,” he added.

On the menu, guests can expect family-style sharing dishes, fresh daily catches cooked to order and a raw bar filled with highlights such as Greek wild oysters, whole-fish sashimi and tartar.  Signature dishes will include the Milos Special, a tower of paper-thin, crispy fried zucchini and eggplant slices over house-made tzatziki and Kefalograviera cheese.

Originating in Montreal in 1979, the restarant is now found in New York, Athens, Las Vegas, Miami and London.

Spiliadis joins Ariana Bundy, Heston Blumenthal and Jose Andres, who have already announced their plans to open restaurants in the new five-star resort on the Palm Jumeirah.

Elsewhere, The Royal Atlantis Resort & Residences will feature over 90 swimming pools including a stunning rooftop infinity pool suspended 90 meters above The Palm, relaxing private beaches and further, soon-to-be-announced restaurants by award-winning celebrity chefs.
