VIDEO: Watch the art of candy-making at Papabubble
Sweet on you: The ancient artisanal process of candy making lands in Dubai.
Have you ever seen candy made right in front of your eyes? Well, you can if you visit Papabubble.
A cross between a mad scientist’s lab and a designer store, Papabubble is a haute confectionary originally from Barcelona, with stores now located in Amsterdam, New York, Tokyo and Seoul.
Now you can watch the entire candy-making process in all its sticky glory at the new Papabubble store in Dubai.
When owner Nusa Noman spotted the brand in Barcelona she knew she wanted to bring Papabubble to Dubai: “Everyone loves candy, and to be able to see it being made the original way is a wonderful experience.”
Nusa and her team of artisanal candy-makers brings unique artistic flair to handmade hard candies – from customised candy bites with names, iconic Dubai landmarks, and Arabic phrases wedged in the centre of each sweet to giant novelty Minion-shaped lollies – all made right inside their little shop with big flavours.
Working at a long, narrow table that fills about half of the open-plan store in Mercato Mall, Barcelona-trained candy-makers create sweet treats the old-fashioned way, pouring boiling sugar onto a giant cooling slab, adding oils of fruit and other intoxicating flavours, pulling the molten mass until it changes colour and then cutting it carefully with gigantic scissors. The result is multicoloured candy shaped and cut into bite size pieces that burst with flavours like watermelon and tart lime.

Naturally, this lime and strawberry masterpiece was our favourite.
